The Alvares family has been growing coffee in El Salvador for more than 100 years. The El Borbollon farms are located in the lush green hills of Santa Ana, in the west of the country, which has ideal conditions for growing coffee, including rich volcanic soil and a mild climate.
The coffee beans grown on the El Borbollon farms come from two small neighboring farms, La Reforma and Santa Maria. The coffee cherries from these farms are hand-picked from December to March by specially trained pickers, who carefully select only the best and fully ripe berries. After the coffee cherries are passed through roller pulpers, they are washed and placed in fermentation tanks for a while to develop flavors. They are then washed again and left to dry in the courtyards and the dried coffees rest in wooden silos.
Finca La Reforma and Finca Santa Maria were founded in 1892 by Rafael Alvarez on the humid slopes of the Santa Ana volcano. The Alvarez Diaz brothers are the fourth generation of coffee producers in this special region. Despite El Salvador's recent battle with coffee rust affecting Bourbon trees, the Alvarez family has not compromised their commitment to quality and continues to plant only red Bourbon coffee trees on both farms.
